I cant for the life of me figure out how to take the ISO off of Automatic.. can anyone help me?!

Hi Holly and welcome to the Q&A Board!

You change the ISO via the FUNC. Button when in Shooting Mode. Canon has a great online resource for the A510. Here is the section on the function button:

Use the arrow buttons to navigate to and select the ISO number you want:
