The printer shouldn't do anything that you don't request. Some of them do provide color correction, red eye removal, etc. on line but I personally prefer to send them what I feel is a complete image. Cropped to the proper size, color verified, perhaps a tad of sharpening (USM) and if desired any special "processing" I might want to include.
If the printer provides a color profile for their printer I would suggest downloading it and using it in your favorite editor to see how their equipment will render the colors (assuming that you've done some sort of calibration of your monitor of course).
