I've read that one can shoot Video on the Canon A620 in 640 x 480 resolution mode and create a file of about 8 minutes in length that will be about one Gigabyte.

If I purchase a 2 Gig SD Card or a 4 Gig SD Card...does that mean that I can save 2 or 4 one Gig separate Video files on the larger capacity cards?  Stitching the files together later on on computer.  On the 4 Gig card....could I save a 4 Gig file...that would be about 30 minutes of Video?  or is 1 Gig the physical limit that the camera/software will allow the video file to reach?

Yes. The maximum physical limit per video file is One Gig, so you'll have to stitch them together.
